The industry as a whole made close to $2 billion more in 2009 than in 2008, and much of that was produced by the top three companies.

As part of Compass Group PLC in London, which is the largest contract catering company in the world, Compass Group North America was responsible for 40 percent of the group's total profits in 2008. It distributes food to corporate dining companies like Bon Appetit Managing Co. and FLIK International, health care companies like Crothall Health-care, restaurants such as Levy Restaurants, and education companies like Chartwells. In addition to the United States, it supplies products to Canada and Mexico. Compass Group North America's total sales volume in 2008 was $9,000.

Making Fortune magazine's 2010 list as one of the "World's Most Admired Companies," Aramark also initiated $8,925 in sales volume in 2008, making it the second-highest producer in the food service management industry. It distributes food and uniforms for health care companies, colleges and universities, school districts, sports and entertainment industries, business and industry companies such as restaurants, and correctional institutions. It services a total of more than 3,000 locations and delivers to 21 countries outside the United States.
